The
Chef of Duane Park Patisserie was not always a
Master Baker. She was born Madeline Carvalho
in 1948 in Lexington Massachusetts and raised
in Ohio. The second of five children of Maxine
and Joseph Carvalho, both Portuguese
immigrants.
Madeline
began baking with her mother at 9 yrs old and
won a prize in Junior Division of Pillsbury
Bake-off. Her first cooking job was as a
short-order cook at age 15 in local restaurant
in Vandalia, Ohio.
Madeline
holds a Bachelor of Music Degree from the
University of Cincinnati Conservatory of
Music. While in college she began her career
as a freelance caterer. She moved to New York
in 1971 and discovered that the business of
food was a completely different experience
than she had encountered in Ohio.
Madeline
became fascinated by the passion, interest,
and sophistication of both diners and chefs.
She attempted to get work in various
restaurants, but discovered that women were
not accepted as professional cooks. After much
persistence (not to mention four months of
free work) Madeline became the first woman to
be hired as a cook at the Plaza Hotel.
She spent two and one half years at the Plaza Hotel,
working through all stations, but
concentrating on pastry and baking.
In
1976 she was Garde-Manger at the Palace
Restaurant and moved on to become Chef at O'Neal's
Restaurant in 1977.
From
1977-1988 she ran the neighborhood favorite Patisserie
Lanciani in Greenwich Village and in 1985,
she opened the Patisserie Lanciani in Soho.
Both establishments are now closed. In 1992
she opened Duane Park Patisserie at the
present location on Duane Street.
Madeline's
work and bakeries have been featured in many
major publications including: THE NEW YORK
TIMES, NEW YORK MAGAZINE, THE NEW YORKER. THE
NEW YORK POST, THE DAILY NEWS, NEWSDAY, USA
TODAY, PASSION, THE WASHINGTON POST, THE WALL
STREET JOURNAL, THE NEW YORK OBSERVER, THE
BERGEN RECORD, TRAVEL & LEISURE, GOURMET,
BON APPETIT, FOOD AND WINE, CHOCOLATIER,
MODERN BRIDE, BRIDE'S MAGAZINE, VICTORIA
MAGAZINE, MARTHA STEWART LIVING,
"W", ZAGAT'S plus guides to New
York, as well as local newspapers and
publications.
Her
creations have been enjoyed by Presidents,
Kings and Queens, Heads of State,
"Literary Lions", Financial Wizzards,
Fashion Moguls, Opera Stars, Oscar Winners,
Movies Stars, Tony Winners, Grammy Winners,
Rock Stars and Models as well as the K-l class
at P.S. 234 in Manhattan.
